A handwritten recipe entitled, "Mother's Dutch Bean Soup", written by Mrs. Clyde Borneman, dating from circa 1950. Within, Borneman provides Alfred L. Shoemaker with an outline for preparing the Pennsylvania Dutch dish.

Transcription
Mothers Dutch Bean Soup.
2 qts beef stock (fat removed)
Slice into it 1 large onion
Add ½ teaspoon baking soda
1 Ib. dry soup beans (soak overnight)
Simmer slowly 2 hours
Add 1 Ib. dry hard smoked
sausage cut in thin slices cook ½ hour longer and serve.
